摘  要:由于对其葡萄酒评价时没有统一的评价标准,现阶段大都采用聘请有资质的品酒员来对葡萄酒的品质进行打分,但消耗的资金、精力相对较大.从4个方面提出了一套系统的葡萄酒评价体系:1.如何区分A、B两组品酒员评价结果的好坏;2.如何根据酿酒葡萄的理化指标和葡萄酒的质量对这些酿酒葡萄进行分级;3.分析酿酒葡萄与葡萄酒的理化指标之间的联系4.用葡萄酒和葡萄的的理化指标、葡萄酒的芳香指标对葡萄酒品质进行评价的方法.最终得出结论:葡萄酒的理化指标对葡萄酒的质量有影响,但应用葡萄酒的理化指标和感官指标共同评价葡萄酒的质量,并给出葡萄分级、酿酒葡萄与葡萄酒的理化指标之间的回归方程.Owing to the lack of evaluation criterion for wine, people usually employ the qualified wine tastes to evaluate the wine. But it costs a lot of money and energy. This thesis put forward a wine evaluation system from four aspect. Firstly, how I;o distinguish the better one form the conclusion of two wine tastes group. Secondly, how to classify the wine grapes according to the physicochemical indexes of wine and wine grapes. Thirdly, analysis the relationship between wine's physicochemical indexes and wine grapes'. Fourthly, we found a method to evaluate wine, using the physicochemical indexes of wine and wine grapes,the aromatic indexes. At last, we lead a conclusion that the physicochemical indexes of wine and wine grapes can influence the wine' quality. While we should ues the physicochemical indexes as well as the sensory indexes to evaluate wine. We also provide the grades of wine, and found the regression equation between the physicochemical indexes of wine and wine grapes.
