摘 要:[目的]探讨烟梗回潮与切丝过程因素对梗丝质量的影响程度。[方法]采用正交试验分析法,分别对洗梗水温、贮梗时间、压梗间隙及切梗丝宽度等影响梗丝物理质量和感官质量的参数进行方差分析,系统分析研究所生产出梗丝的物理指标和感官质量。[结果]在试验范围内,洗梗水温对膨胀梗丝填充值和贮梗后回透率有显著性影响,当洗梗水温50℃,贮梗时间4 h时,膨胀梗丝填充值和贮梗后回透率较高;当压梗间隙为0.8 mm、切梗丝宽度为0.11 mm和压梗间隙为1.2 mm、切梗丝宽度为0.11 mm的梗丝外观形态更接近叶丝,与叶丝的配伍性较好,其感官质量皆优于传统梗丝。[结论]研究对提高梗丝的综合利用率,拓展其使用价值有重要意义。[ Objective] In order to study the degree of influence of stem moistening and cutting on the physical and sensory quality of the cut stem. [ Method] By using orthogonal experiment analysis, temperature of washing stem, stem flattening gap, stem storing time and cutting stem width were analyzed respectively by ANOVA. [ Result] Within the experimental range, temperature of washing stem had a significant influence on filling capacity of expanding cut stem and moisture regain. When the temperature of washing stem was 50 ℃, the time of cut stem storing was 4 hours, filling capacity of expanding cut stem and moisture regain ratio of cut were higher; when the stem flattening gap was 0.8 mm, cutting stem width was 0.11 mm and the stem flattening gap was 1.2 mm, cutting stem width was 0.11 mm, the shape of cut stem was close to cut tobacco, and the compatibility with cut tobacco was better, the sensory quality was better than traditional cut stem. [ Conclusion] The study has significance on improving cut stem comprehensive utilization rate, broadening its utilization value.
