摘 要:目的:了解海南和广西两地产牛大力的营养品质差异和主要成分高丽槐素的含量差异,比较两地产牛大力的品质优劣。方法:采用常规的食品营养成分分析方法测定多个营养指标含量及总灰分含量;采用高效液相色谱法测定牛大力中高丽槐素的含量。结果:海南和广西两地产牛大力中多种营养成分的含量分别为:糖,24.12%和7.83%;淀粉,4.93%和26.96%;纤维素,14.54%和60.49%;蛋白质,2.58%和0.031%;氨基酸,0.067%和0.011%;总膳食纤维,0.67%和0.82%;粗脂肪,0.315%和0.59%;维生素B2,0.166、0.156 mg·g-1;维生素C:1.67、1.02 mg·g-1。海南和广西两地产牛大力中含高丽槐素分别为0.064、0.012 4 mg·g-1。海南产牛大力中糖、淀粉、蛋白质、总氨基酸、维生素C和高丽槐素的含量显著高于广西产牛大力(P<0.05),而广西产牛大力中纤维素、总膳食纤维和脂肪含量显著高于海南产牛大力(P<0.05),总灰分与维生素B2含量在两地样品间差异无统计学意义(P>0.05)。结论:海南与广西两地产牛大力的营养品质及药用品质有明显差异。Objective: To ascertain difference of nutrition and medicinal quality of Millettia specisoa Charon root collected from Hainan and Guangxi provinces in China. Methods: The conventional nutritional methods were applied to determine carbohydrates, starch, fiber, protein, amino acid, dietary fiber, fat, ash, VB2and VC, and the content of maakiain was determined by HPLC. Results: The contains (%) of ten nutrition indexes of M. specisoa root from Hainan and Guangxi provinces were obtained, and they were as following: carbohydrates 24. 12 and 7. 83, starch 44. 93 and 26. 96, fiber 14. 54 and 60. 49, protein 2. 58 and 0. 031, amino acid 0. 067 and 0. 011, dietary fiber 0. 67 and 0. 82, fat 0. 315 and 0. 59, ash 1.75 and 1.77, VB20. 166 mg.g-1and 0. 156 mg.g-1, Vc 1.67 mg.g-1 and 1.02 mg-g-1. The contents (mg.g-1) of maakiain were 0. 064 (Hainan) and 0. 012 4 (Guangxi). According to these results, we found the contents of carbohydrates, starch, protein, amino acid and maakiain in Hainan material were higher than those in Guangxi material. While the contents of fiber, dietary fiber, fat in Guangxi material were higher than those in Hainan. But the contents of ash and VB2 were no significant different between these two materials. Conclusion: The nutrition and medicinal qualities of Hainan material were different between Hainan and Guangxi materials.
