摘 要:通过对近年来可食性薄膜的研究进行综合分析,从而得出当前可食性薄膜的主要制备方法及其发展趋势,为可食性薄膜的深入研究奠定理论基础。经过研究发现,当前国内外可食性薄膜的加工方法大体一致,原材料种类繁多,以多糖类和蛋白质类可食性薄膜居多,薄膜性质大体相同。综合分析得出:国内外可食性薄膜的实验室研究阶段基本成熟,但是,在可食性薄膜的应用方面还有待进一步推广。可食性薄膜是绿色包装材料的典型代表,成膜工艺基本成熟,但工业化生产和推广应用还有待提升,因此,加大对可食性薄膜工业化生产和推广应用的研究势在必行。This paper aims to research of edible film synthetically analysis in recent years, and it is con- cluded that the current main preparation methods and development tendency of edible film, as the theoretical basis for the further research of edible film. To refer to a large number of literature data to prospective analysis. Through the study found that, at present, broadly in line with a processing method of edible film at home and a- broad, there are many different kinds of raw materials, in the majority with polysaccharide and protein edible film,is approximately the same properties. Comprehensive analysis: domestic and international laboratory research stage about the film is basically mature, but, in the aspect of the application of the edible film remains to be further promoted. Edible film is a typical representative of the green packaging materials, film-forming process is basically mature, but industrial production and application has yet to be promoted, thus, increase of edible film industrial production and application of research is imperative.
