摘　　要：亚硝酸盐具有致癌作用,是一种毒性较强的物质。利用722型分光光度计测定了三个系列(同名不同牌子、同牌子不同名称与同牌子不同质量)共10种火腿肠中亚硝酸盐的含量,通过计算所测定的10种火腿肠中亚硝酸盐的含量,均未超过国家食品卫生标准,可以食用。Nitrite is an acute toxic substance that has a carcinogenic effect. The contents of nitrite from three series （ different brands of the same name, different names and different quality of the same brands） of 10 kinds of ham sausage were studied, which were determined by spectrophotometric method. The results showed that 10 kinds of ham sausage of nitrite do not exceed the national food hygiene standards by the calculation. People can buy and eat them.
