摘　　要：环境污染的加剧,导致贝类食品中的重金属和毒素残留问题日益受到关注。依据近年来国内外相关研究报道,对贝类及其加工产品中重金属及毒素危害的控制消减技术进行了总结和归纳,对于尚存的问题进行了分析,对今后的研发趋势也进行了展望。In recent years, the hazard of heavy metals and toxins in shellfish gets increasing attentions due to the environmental pollution. In this paper, control and reducing techniques of heavy metals and toxins in shellfish were summarized, and the problems remained for further studies were indicated. Based on these, the trend for the development of new strategies in the future was also proposed.
