摘　　要：针对屠猪肌肉常见的旋毛虫、囊尾蚴、肉孢子虫、孟氏裂头蚴4种主要寄生虫的检验鉴别、卫生评价、卫生安全处理作详细论述。Four main parasites including trichina,cysticercus,meat sporozoan,sparganum mansoni were common in slaughtered pig muscle. The test and identification,sanitation assessment,sanitation and safety treatment of them were introduced in detail.
