摘  要:本实验测定了绿洲灌区规模养猪场中三元(杜长大)和四元(皮杜长大)杂交商品猪鲜肉中的细菌菌落总数、大肠杆菌群、沙门氏菌微生物指标,挥发性盐基氮含量,汞、铅、砷、镉、铬等重金属残留以及金霉素、土霉素、磺胺类药物、伊维菌素、喹乙醇、盐酸克伦特罗和莱克多巴胺等兽药残留理化指标。结果显示,在被检的120份新鲜肉样中,所有肉样均检出细菌菌落、大肠杆菌、挥发性盐基氮及汞、铅、无机砷、镉和铬等重金属,未检出沙门氏菌与金霉素、土霉素、磺胺类药物、伊维菌素、喹乙醇、盐酸克伦特罗和莱克多巴胺等兽药残留。在检出的指标中,细菌菌落总数平均值为8.4×104 cfu/g,大肠杆菌群为4.5×103 mpn/100g,挥发性盐基氮为6.01mg/100g,总汞为0.007mg/kg,铅为0.018mg/kg,无机砷为0.006mg/kg,镉为0.026mg/kg,铬为0.031mg/kg,各项指标合格率均达100%。表明张掖市市售新鲜猪肉安全良好,可放心食用。In this study,bacteriological index(total number of bacterial colonies,total coliform group,population of salmonella),TVB-N content,heavy metal residues(mercury,plumbum,arsenic,cadmium,chromium)and veterinary drugs residues(aureomycin,terramycin,sulfonamide,ivermectin,olaquindox,clenbuterol hydrochloride,ractopamine)of 120 fresh pork samples from pigs of three breed hybrid(duroc×landrace× big white)and four breed hybrid(Pietrain × duroc×landrace×big white)were determined in large-scale pig farms of oasis irrgation distric.The results showed that the bacterial colonies,coliform,TVB-N,mercury,plumbum,arsenic,cadmium and chromium were detected,while the salmonella,aureomycin,terramycin,sulfonamide,ivermectin,olaquindox,clenbuterol hydrochloride and ractopamine were not detected in 120 samples.In the detected indicators,the total number of bacterial colonies and coliform groups were 8.4×104cfu/g and 4.5×103mpn/100 g respectively.The content of TVB-N was 6.01mg/100 g.The content of mercury,plumbum,arsenic,cadmium and chromium were 0.007mg/kg,0.018m/kg,0.006mg/kg,0.026mg/kg and 0.031mg/kg respectively.The qualification rate in various indicators reaches 100%,and it indicated that the pork quality in Zhangye city is safe.
