摘  要:现代医学和营养学的研究表明,银耳具有很高的营养价值和药用功效,能够增强免疫力,防止老年痴呆,延缓衰老。这使银耳作为一种特效营养保健食品备受人们的重视,已成为当前医药和食品领域研究与开发的热点。通过综述近期国内外有关文献,在介绍银耳理化性质的基础上,重点论述银耳的精深加工技术及其影响因素。同时也对银耳精深加工的深入研究和密切相关产品的开发进行展望,旨在促进银耳精深加工的研究和应用。The Tremellafuciformis has been used for medicinal purposes due to its diverse physiological activities such as im- proving immunode ciency and preventing senile degradation of microvessels, becoming research hotspot in the field of medicine and food in recent years. On the basis of introducing the physicochemical of T. fuciformis, the biological activities of T. fuciformis were mainly analyzed, and the processing technology and the factors that having an effect on its processing technology were summarized. Furthermore the development prospect of T. fuciformis was put forward for development of T. fuciformis industries.
