摘 要:目的了解某市流动街头餐饮肉制品中的防腐剂、合成着色剂的使用情况。方法对流动街头餐饮肉制品进行随机抽样调查,用高效液相色谱法检测分析了88份肉制品中苯甲酸、山梨酸、柠檬黄、苋菜红、胭脂红、日落黄的含量。结果所采集的88份流动街头餐饮肉制品中苯甲酸、山梨酸的总合格率为90.9%,共检出8份样品中苯甲酸的含量超标,所有样品中山梨酸的含量均未超标。88份样品中共检出6份样品中含有合成着色剂,总合格率为93.2%;其中检出4份样品含有柠檬黄,检出率为4.5%;检出1份样品含有胭脂红;1份样品含有日落黄;苋菜红在所有样品中均未检出。结论食品添加剂在流动街头餐饮肉中的违规使用情况仍然存在,应加强监管以杜绝违规现象。Objective To understand the situation of preservatives and synthetic pigments in street meat products in a city.Methods Investigating street meat products at randon spot- check,using the HPLC method to have analyzed the content of benzoic acid,sorbic acid,lemon,amaranth,carmine,sunset yellow. Results The total qualified rate for benzoic acid and sorbic acid in 88 street in the food and beverage products was 90. 9%,the content of benzoic acid in 8 samples was over standard,and all the sorbic acid was over the standard. 6 samples in 88 samples were detected containing synthetic colorants with the total qualified rate 93. 2% including 4 samples contain lemon with the detection rate 4. 5%,one carmine and one sunset yellow;amaranth was not detected in all samples. Conclusion The problem of food additives illegally used in street meat products still existed,indicating that measures be taken to enhance the qualification rate in use of food additives.
