摘  要:20世纪以来,谷氨酸发酵工艺发生了较大程度的变化,现存工艺中分为两大类:"亚适量等电离交"工艺和"温敏浓缩等电"工艺。在国家政策和生产成本的严格要求下,"亚适量等电离交"逐渐显现出其劣势。针对传统工艺的弊端,部分企业独辟蹊径,创出了"超亚适量转晶等电离交"工艺。本文就谷氨酸发酵及提取的两大基本工艺路线及衍生出的新工艺进行讨论,通过菌种特性、提取工艺选择、提取收率、染菌几率、下游处理、生产成本等角度对这三种工艺进行比较分析,归纳各工艺优缺点,以利于味精制造行业健康发展。20th century,glutamic acid fermentation technology has changed largely,basically,the production process of glutamic acid fermentation is divided into two categories: suboptimal dose isoelectric IX and temperature Sensitive concentrated isoelectric. Because of the strict requirements of national policy and production costs,the suboptimal dose isoelectric IX shows its disadvantage. Aimed at the disadvantages of traditional process,some companies find a new method which is named "ultra suboptimal dose crystal transformation isoelectric IX". In this paper,two basic process routes and a new method which is derived from the two basic methods are discussed. We analysis the different processes through strain characteristics,extraction technology,extraction yield,contamination probability,downstream processing and production cost in order to summarize the advantages and disadvantages of each technology which will promote the development of the MSG industry.
