摘 要:以菌丝长速和浓密程度、液体发酵菌丝体生物量及多糖产量为考核指标,从22个国审黑木耳(Auricularia auricula-judae)品种中筛选高产多糖的菌株,并对其发酵特性进行分析。结果表明,黑木耳2号菌株菌丝浓白、生长速度快,在基础发酵培养基中获得多糖产量是其他菌株的2倍以上,是较优的液体发酵高产菌株;发酵第五天多糖产量最高,在后续培养基和培养条件优化试验中可在此时终止发酵。Using mycelial growth rate, colony dense degree, liquid mycelium biomass and polysaccharide production as assessment indicator, high polysaccharides yield Auricularia auricula-judae strain was screened from 22 state approved strains, and the fermentation characteristics of the selected strain was analyzed. The results demonstrated that the polysaccharide production of HME2 with thick white and growth fast mycelia was two times more than that of other strains in basic fermentation medium, which showed that HME2 was the optimum liquid fermentation producing strain. The highest polysaccharide yield of HME2 was obtained at the 5^th day, indicating that in the subsequent optimization of fermentation culture media and conditions test could be terminated at this time.
