摘　　要：本文以"三聚氰胺"等乳制品安全事件为例,对食品安全事件的溢出效应及其消费替代行为进行分析,认为国内频发的食品安全事件具有明显的溢出效应,使消费者选择替代品和替代方式并引发消费替代行为,进而对整个品类及产业链甚至相关行业与政策法规产生溢出效应。This paper uses the＂melamine＂and other safety incidents in dairy products as examples to analyze the spillover effects of food safety incidents and their consumption substitution behavior. It finds that that the food safety incidents in China have obvious spillover effect,which makes the consumers choose substitute goods and ways,leading to the consumption substitution behavior,and further generating spillover effects on the whole category of the products and the industry chain,and even related industries,policies and regulations.
