摘 要:目的调查本地食用冰块卫生状况,保障人民健康。方法抽取本地酒吧/KTV、大中型饭店制冰机自制的食用冰块进行微生物和理化指标的检测。结果 2011-2013年共检测食用冰块119件,检测项目为总大肠菌群、细菌总数、致病菌、总砷、铅、铜。食用冰块2011年的合格率为34.3%,检出2株金黄色葡萄球菌;2012年的合格率为53.5%;2013年的合格率为73.1%。检测制冰水(自来水)共38件,合格率为100%。有清洗消毒功能的制冰机生产的食用冰块合格率高。结论加强监管力度,提高食品安全生产意识,食用冰块卫生状况才能得到改善。Objective To investigate the sanitary conditions of edible ice cube in Kaixian county,Chongqing municipality, and to ensure people's heath. Methods The ice cube were sampled from local bar/KTV, middle and large size restaurants and were detected microorganism and physicochemical indexes. Results A total of 119 ice cubes were detected with regard to total coliform group, total bacterial count, pathogenic bacterium, total arsenic, lead and copper. The qualification rate of the edible ice in 2011 was 34.3% and two strains of staphylococcus aureus were detected. The rate in 2012 and 2013 were respectively 53.5% and 73.1% A total of 38 pieces of tap water for making ice were tested, with a qualified rate 100%. The qualified rate of edible ice cube made by ice machine with cleaning and disin- fection functions was relatively higher. Conclusion To improve the edible ice cube sanitary condition, surveillance and food safety awareness are yet to be strengthened.
