摘 要:目的了解锡山区大中型餐饮单位熟食制品微生物污染现况,及时发现和解决问题,确保食品安全,预防食源性疾病的发生。方法按随机采样的原则对锡山区2012年-2014年大中型餐饮单位熟食制品进行卫生监测。按照国家标准进行检验和评价,并对检测结果进行统计分析。结果锡山区2012年-2014年共检测样品889份,总合格率仅为48.59%,菌落总数合格率为75.70%,大肠菌群合格率为54.67%,致病菌合格率为98.20%。大型规模经营单位的合格率高于中型;量化分级A级餐饮单位的合格率明显高于非A级餐饮单位的合格率;第三季度的合格率明显低于其他季度;禽肉类的样品总合格率明显低于其他类别。结论锡山区餐饮单位熟食制品微生物污染较为严重,卫生质量较差,存在一定的安全隐患。为防止食源性疾病的发生,保障人民群众身体健康,加强卫生监督管理制度已刻不容缓。Objective To, analyze the microorganism contamination of cooked food products from the restaurants, so as to timely find and solve the problems, ensure food safety, and prevent and control food - borne disease. Methods During the period from 2012 to 2014, we use stochastic sampling to choose cooked food samples to conduct the microorganism contamination test. In accordance with national standards for testing and evaluation, and the results were conducted for statistical analysis. Results A- mong the 889 samples detected in Xishan district during 2012 - 2014, only 48.59% met the hygiene standard. 75.70% of the total bacteria colony qualified, 54.67% qualified the coliform detection, and 98.20% qualified the pathogens detection. Also, by comparing the qualification rate of these samples, we found out that large - scale enterprises were better than medium - scale ones, and a rate enterprises were better than low - rated ones. In the third quarter of each year, the percentage of passing was lower than in other quarters, and especially the qualified rate of poultry product was lower than in others. Conclusion The sanitary conditions of the cooked food from the restaurants in Xishan district had already been a serious problem, the hygiene quality is worse with some safety risks. In order to ensure food quality and the health of consumers, food hygiene management systems have to be strengthened immediately.
