天津市售自制饮料中人工合成色素使用情况调查

摘　　要：目的通过抽样调查和检测分析一定数量的市售自制饮料样品,了解天津市市售自制饮料中6种不同人工合成色素的添加使用情况,为加强食品监管提供科学有力的依据并保障消费者的身体健康。方法按照标准,采用高效液相色谱二极管阵列检测法进行检测,并对结果进行分析整理和总结。结果所检的76份样品中合成色素的检出率为35.5%(27/76),其中柠檬黄的检出率最高,为22.4%(17/76),赤藓红的检出率最低,为0.0%,重叠使用2种及2种以上色素的样品占总数的17.1%(13/76)。结论通过调查和分析判断,此次抽检的天津市市售自制饮料中6种不同人工合成色素的添加合格率达到100.0%,但是样品中人工合成色素的检出率较高,建议市场监督管理和其他有关部门继续保持,并加强卫生监督监测和健康教育的力度,确保食品安全,保障消费者的身体健康。Objective To understand the use of 6 kinds of synthetic pigments of some self-made beverage in Tianjin by the sampling,detection and analysis of a certain quantity of some self-made beverage from market,in order to provide scientific basis to improve food administration,and protect consumers＇ health. Methods According to standards,high performance liquid chromatography diode array detection method was used to detect,and the results were analyzed,summarized and concluded.Results The detected rate of 76 synthetic pigments samples was 35. 5%（ 27 /76）,and the detection rate of tartrazine was the highest of 22. 4%（ 17 /76）,the erythrosine had the lowest detection rate of 0. 0%. And the quantity of using 2 pigments and more accounted for 17. 1%（ 13 /76）. Conclusion Through investigation and analysis,we know the qualified rate of 6 kinds of synthetic pigments in self-made beverage in Tianjin is 100. 0%,but the samples are with high detection rate of synthetic pigments. Supervision and monitor of food health and public health education program should be strengthened for the benefit of consumers health,and food safety.
