富硒香菇的研究现状及应用展望

摘　　要：香菇具有极高的食用和药用价值,硒对人体健康极为重要,富硒香菇的研究具有广泛的应用前景。从硒在香菇体内的代谢、香菇的富硒方式和能力、富硒香菇的菌种选育、栽培技术及产品研发等方面阐述了富硒香菇的研究现状,并对研究中存在的问题、未来发展方向与应用前景进行了探讨。Lentinula edodes has a very high value in edible and medicine utilization. Selenium is extremely important to human health. Research of selenium-enriched Lentinula edodes has broad application prospects. In this paper,research progress in several aspects of selenium-enriched Lentinula edodes is expounded such as metabolism of selenium in Lentinula edodes,selenium accumulation process and ability of Lentinula edodes,breeding and cultural techniques of selenium-enriched Lentinula edodes,and development of downstream product. Besides,the problems in research,future development and application prospect in seleniumenriched Lentinula edodes is also discussed.
