摘  要:采用毛细管凝胶电泳技术对燕窝及银耳中的水溶性蛋白质进行分离测定。通过优化条件,建立燕窝、银耳的蛋白提取方法以及毛细管凝胶电泳方法,检测燕窝和银耳水溶性蛋白标志峰。同时采用3种燕窝样品对所建立的方法进行验证,证实了方法的可靠性。毛细管电泳技术对燕窝和银耳水溶性蛋白定量准确,重复性、精密度、稳定性各项指标良好,适合于对掺假燕窝中银耳成分的检测。Capillary gel electrophoresis(CGE) method was applied to identify edible bird's nest(EBN) and tremella based on respective water-soluble protein in this study. After optimization of experimental conditions, protein extraction conditions and CGE method for EBN and tremella were optimized and characteristic elute peaks of water-soluble protein were observed. Three different EBN samples were tested to validate the method The results showed that CGE method was stable in quantification of water-soluble proteins of EBN and tremella with good repeatability and high precision, which makes it applicable in detection of tremella ingredient from adulterated EBN.
