摘  要:试验旨在研究育肥后期饲粮中添加生物发酵饲料对延边黄牛屠宰性能的影响。选择12头平均体重(545.55±27.0)kg的体健无病延边黄牛阉牛,随机分成试验组和对照组,每组6头,试验组饲喂生物发酵饲料每头牛2 kg/d,对照组不饲喂生物发酵饲料,试验组和对照组的基础日粮营养水平基本相同。预饲期10 d和正式期90 d。结果表明:与对照组相比,试验组胴体重、宰前活重、屠宰率和眼肌面积分别提高了20.96 kg、15.78 kg、1.92%、12.13 cm2(P<0.05),背最长肌中粗蛋白质含量降低了10.40%(P<0.05);粗脂肪含量提高了19.53%(P<0.05);水分、灰分含量比对照组略有降低,但差异不显著(P>0.05)。试验组的油酸含量显著高于对照组(P<0.05);不饱和脂肪酸含量高于对照组,但差异不显著(P>0.05);其余各项脂肪酸指标均低于对照组,差异不显著(P>0.05);牛肉背最长肌的氨基酸含量除谷氨酸含量试验组显著高于对照组外(P<0.05),其余各组均无明显差异(P>0.05)。综上所述,在育肥后期饲粮中添加生物发酵饲料可提高延边黄牛的屠宰性能、提高背最长肌中粗脂肪含量、降低粗蛋白含量、提高油酸、谷氨酸含量。This experiment was conducted to study the effect of adding biological fermentation teed at the latter fattening period on slaughtering performance of Yanbian yellow steers.Select 12 heads healthy Yanbian yellow steers whose average weight are (545.55±27) kg, and divide randomly these steers into experiment group and control group which is equal to the number of the other group.Base on basically the same basic diet nutrition level, each head of cattle in test group fed with biological fermentation feed 2 kg/d, whether steers of control group don't fed with biological fermentation feed, then advanced experiment period has 10 d, and formal experiment period has 90 d. The results show that: compared with control group, carcass weight ,live weight before slaughter,dressing percentage and loin eye area of experimental group respectively increased by 20.96 kg, 15.78 kg, 1.92%, 12.13 cm^2(P〈 0.05); crude protein content of the longest back muscle was reduced by 10.40%(P〈0.05); the crude fat content increased by 19.53%(P〈0.05); moisture and ash content were slightly lower than the control group, but had no significant difference(P〉0.05). The oleie acid content of experimental group is significantly higher than control group (P〈0.05); unsaturated fatty acid content was higher than control group, but had no significant difference(P〉0.05); The other fatty acids indicators are lower than the control group, no significant difference(P〉 0.05). Amino acids content except glutamic acid content of the longest back muscle in experimental group were significantly higher than control group (P〈O.05), and had no obvious differences between the other groups(P〉0.05). In conclusion,adding biological fermentation feed in fattening later in diet can improve the slaughter performance, crude fat content in longest back muscle,oleic acid content, glutamic acid content and reduce the crude protein content of Yanbian yellow steers.
