不同性别武定鸡腿肌和胸肌脂肪酸含量比较分析

摘　　要：本文旨在研究不同性别成年武定鸡腿肌和胸肌中脂肪酸含量的差异,应用高效气相色谱仪检测腿肌和胸肌冻干粉中的18种脂肪酸。结果表明:1武定鸡腿肌和胸肌脂肪酸以油酸、棕榈酸含量最高,其次是亚油酸、硬脂酸、花生四烯酸。2武定鸡腿肌、胸肌脂肪酸以不饱和脂肪酸(USFA)为主,其含量显著高于饱和脂肪酸(SFA)(P<0.05)。腿肌中USFA含量占18种脂肪酸含量的54%以上,胸肌中USFA含量占18种脂肪酸含量的60%以上。3相同性别不同部位脂肪酸含量差异显著(P<0.05),腿肌的SFA、MUFA、USFA含量与胸肌差异显著(P<0.05)。4性别对武定鸡腿肌脂肪酸含量影响显著(P<0.05),而对胸肌脂肪酸含量影响不显著(P>0.05)。综上,不同性别武定鸡腿肌和胸肌脂肪酸含量有明显差异,母鸡腿肌脂肪酸含量最高。This paper was aimed to study the differences of fatty acid content of leg and breast muscle in adult Wuding chicken with different gender. 18 kinds of fatty acids in freeze dry powder of breast and leg muscle was detected by high effective gas phase chromatograph. The results showed that：①oleic acid and palmitic acid was the highest in leg and breast muscle of Wuding chicken,followed by linoleic acid,stearic acid and arachidonic acid. ②Fatty acids in leg and breast muscle of Wuding chicken were mainly unsaturated fatty acids（USFA）,which were significantly higher than saturated fatty（SFA）（P〈0.05）. The USFA in leg musle accounted for 54% of the 18 kinds of fatty acids,the USFA content in breast muscle accounted for more than 60% of the 18 kinds of fatty acids. ③Fatty acid content in different parts was significantly different（P〈0.05）. The content of SFA,MUFA,USFA in breast muscle was significantly different from leg muscle（P〈0.05）. ④There was significant difference between different genders of leg muscle fatty acid content in Wuding chicken（P〈0.05）,but there was no significant differentce in breast muscle（P〈0.05）.In summary,the fatty acid content of leg and breast muscle in different gender of Wuding chicken had significant difference,the fatty acid content of leg muscle in Wuding hens was the highest.
