摘 要:农产品在我国日常生活中占有重要的一部分,也是我国经济来源的一部分,但是在农产品生产、加工、运输和储藏的过程中存在安全隐患。介绍了电子鼻的基本原理和结构组成,以及气敏传感器阵列、信号预处理和模式识别技术等研究现状,阐述了电子鼻在农产品新鲜度检测、风味评价、掺假鉴别、病害监控、理化指标检测等品质安全快速检测等方面的应用,剖析了电子鼻研究中存在的问题,并展望了其未来的发展趋势和方向,为相关研究和产业发展提供参考。Agricultural products play an important role in our dally lives, ana are a part hut there are safety problems in agricultural production, processing, transportation and storage process. For discussing the application and development trend of electronic nose, in this article, the principle and constitutes of electronic nose, and the current situation of gas sensitive sensor and its array, signal preprocessing and pattern identification were presented. Its application developments were roundly analyzed in the fields of agricultural product quality and safety, such as freshness detection, flavor evaluation, adulteration identification, disease monitoring, and physical and chemical index, etc. The current problems of this technology were also put forward, and its development tendency was prospected. This review will hopefully provide some references for future development of related research and industry.
