摘  要:[目的]为油棕仁中蛋白质的进一步研究与开发利用提供指导。[方法] 采用非变性聚丙稀酰胺凝胶电泳(NativePAGE)和十二烷基硫酸钠-聚丙稀酰胺凝胶电泳(SDSPAGE)对油棕仁中贮藏蛋白质亚基进行研究,分析油棕仁蛋白主要亚基的组成、分子量、含量、二硫键的位置及种间差异。[结果] 油棕仁中贮藏蛋白质在浓缩胶浓度为7.5%、分离胶浓度为12%的SDSPAGE凝胶系统中可以得到很好的分离。在油棕仁贮藏蛋白中含有6条主要亚基,分子量范围为18.8 ~51.5 kDa,主要是中、小分子量亚基;各亚基之间含一定量的二硫键。非变性凝胶电泳分析表明,油棕仁贮藏蛋白中含有4个不同分子量、不同电荷的组分。[结论] 该研究所选的不同油棕品种之间亚基的组成和含量没有显著性差异。[ Objective ] The research aimed to provide the guidance for the further study and the development and utilization of protein in oil palm kernel. [ Method] The subunits of storage proteins in oil palm kernel were studied by SDS-PAGE and Native-PAGE, including their content, molecular weight, content of disulfide bonds and variance difference. [ Result] Storage proteins in oil palm kernel were well separated by SDS-PAGE with 12% separation gel and 7.5 % pile gel. Under this condition, the storage proteins in oil palm kernel were separated into 6 main subunits, with a molecular weight range of 18.8 ~ 51.5 kDa. This meant that the main subunits were lower molecular weight in oil palm kernel storage proteins. Compared with the result of SDS-PAGE with Native-PAGE, there were some disulfide bonds among the subunits of oil palm ker- nel storage proteins. There were four peptides with different molecular and different electric charge separated by Native-PAGE. [ Conclusion] There was no significant difference between the two kinds of oil palm.
