城镇居民杂粮消费意愿及影响因素分析——来自东中西部的实证分析

摘　　要：基于东、中、西部的三个省会城市居民的抽样调查数据,对当前城镇居民杂粮消费的现状进行分析,采用Logit模型对城镇居民杂粮消费意愿的影响因素进行了测算。结果表明,消费者的年龄、饮食习惯、杂粮营养价值判定、杂粮口感、杂粮价格对消费者杂粮消费行为有重要影响。提出政府在引导健康饮食、培养杂粮品牌、推进杂粮深加工等方面应该有所作为。此外,新形势下马铃薯和小米杂粮的"主粮化"趋势值得关注。Based on the sampling survey data in three capitals of eastern, central and western parts, status quo of urban residents＇ coarse grain consumption was analyzed, and the Logit model is adopted to calculate the influencing factors of the urban residents＇ grain consumption, qlae results show that age, diet structure of consumers, and nutritional value judgment, taste and price of coarse grain have an important impact on consumers＇ coarse grains consumption behavior. The government should take measures in leading a healthy diet, developing grain brand, and pro- rooting grain intensive processing. In addition, potato and millet grains ＂staple＂ trend is worth attention under the new situation.
