摘  要:为研究酵母提取物(YE)最高耐受剂量和最低有效剂量,采用不同剂量的60Co-γ射线(0~10k Gy)辐照YE,研究不同剂量对YE的感观品质、氨基酸含量和微生物生存率的影响。结果表明,当辐照剂量为1.5、3.0、4.0k Gy时,TB11、FB00、FA03 3个批次的YE中微生物含量符合企业标准要求;当辐照剂量超过7 k Gy时,YE有明显的辐照异味产生;当辐照剂量低于8 k Gy时,YE的色泽、口感、氨基酸含量与对照(未辐照)相比无明显变化。酵母提取物中细菌D10为0.7 k Gy,最高耐受剂量为7k Gy,产品箱吸收剂量不均匀度为1.69,故酵母提取物辐照灭菌最低有效剂量不得超过4.1 k Gy,应将产品初始含菌量控制在7.6×106CFU·g-1以内。本研究为酵母提取物辐照灭菌工艺的应用提供了工艺参数。The yeast extract was irradiated by60Co-γ of 0 to 10 k Gy dose range and the sensory quality,amino acid content and microbial survival rate of YE were detected before and after irradiation to study the maximum tolerated dose and the minimum effective dose. Results showed that when the three batches of YE( TB11,FB00 and FA03) were irradiated of 1. 5,3. 0 and 4 k Gy respectively,the microorganisms content was according with enterprise standard. There was obvious irradiation odor when irradiation dose was higher than 7k Gy. The colority,taste and amino-acid content of the yeast extract had no obvious change when irradeation dose was lower than 8k Gy. The bacteria D10 of yeast extract was0. 7k Gy and the maximum tolerated dose was 7k Gy and the absorption dose uniformity of the product box was 1. 69,so the minimum effective dose of yeast extract was not more than 4. 1k Gy. So,the initial bacterial quantity must be controlled within 7. 6 × 106CFU·g- 1. The research for the application of yeast extract irradiation sterilization technology provide the process parameters.
