摘  要:对不同陈化时间的六堡茶熟茶进行了傅里叶变换红外光谱(FTIR)法分析,考察了不同陈化时间六堡茶熟茶与红外光谱特征的关系,结合偏最小二乘判别分析(PLS-DA)进行鉴别,并找出其化学组分差异。样本在主成分空间中区分为不同的类别,基本实现不同陈化时间六堡茶熟茶的鉴别。载荷因子分析显示,5个不同陈化时间六堡茶熟茶化学组成的差异主要体现在茶多酚、咖啡碱及茶多糖3类物质成分含量的不同。可以反映不同陈化时间六堡茶熟茶主要成分组成的差异并进行快速的鉴别。Discriminate zymic Liubao tea from five different years by Fourier transform infrared spectroscopy (FTIR) and partial least squares discrimination analysis (PLS-DA). Different chemical constituents were identified that providing a kind of method to discriminate zymic Liubao tea in different years rapidly and nondestructively. Infrared spectra of zymic Liubao tea from five different years was collected, and the original spectra by the first derivative was preprocessed. The means of partial least squares discrimination analysis combined, then the principal component of the load factor was extracted. The results indicated that each sample was able to form distinct duster in the principal component space, then the identification of zymic Liubao tea from five different years was basically analyzed, and depended on the contents of tea polyphenols, caffeine and polysaccharide. Combined with PLS-DA, discrimination of zymic Liubao tea from five different years was achieved rapidly and nondestructively, and the difference of material composition was revealed.
