摘  要:对秘鲁鱿鱼肝脏的基本营养成分和脂质组成进行分析,同时采用淡碱水解法对其油脂提取工艺进行优化,并采用气相色谱-质谱法(GC-MS)对油脂的脂肪酸组成进行分析。结果表明:秘鲁鱿鱼肝脏富含油脂,其质量分数高达干重的46.61%,且以三酰甘油(61.26%)和磷脂(26.45%)为主;淡碱水解法提取油脂的最佳条件为料液比1:1.5、初始pH 9.0、水解温度70℃、水解时间80 min、加盐量4%,在此优化条件下,油脂提取率为82.87%;秘鲁鱿鱼肝脏油脂富含C20:5n-3和C22:6n-3,两者总质量分数高达31%以上,表明秘鲁鱿鱼肝脏具有较高的营养价值和脂质开发潜力,可开发成食品添加剂、保健品和药品以作为C20:5n-3和C22:6n-3功能性脂肪酸的重要食药来源。The basic nutrient components and lipid compositions of Dosidicus gigas livers were analyzed, and meanwhile the weak alkaline hydrolysis to optimize the oil extraction process was applied and the fatty acid composi- tions were analyzed by gas chromatography - mass spectrometry ( GC - MS) in this paper. The results indicate that Dosidicus gigas livers are rich in oil, and the oil mass fraction is as high as 46.61% of dry weight, which is mainly composed of triglycerides (61.26%) and phospholipids (26.45 % ). The best extraction conditions of weak alkaline hydrolysis were as follows : 1 : 1.5 of material - liquid ratio, initial pH 9.0, 70 ℃ for hydrolysis temperature, 80 min for hydrolysis time and 4% sodiumchloride, and the oil extraction yield was up to 82.87% under the optimal condi- tion. The liver oil of Dosidicus gigas was a rich source of C20: 5n -3 and C22: 6n -3, and the total mass fraction of C20: 5n-3 and C22: 6n -3 reached as high as above 31%. Dosidicus gigas livers had high nutritional value and considerable potential for lipid exploitation, showed that the oil could be developed into food additives, health care products and drugs as important sources of C20: 5n- 3 and C22: 6n- 3 functional fatty acids.
