摘　　要：以山东中德发酵技术有限公司的毕赤酵母泥为实验材料,采用平板分离培养法,通过分离培养基的选择、酵母菌落外观形态、细胞形态观察及细胞大小、酵母死亡率、增殖量以及发酵力等指标的检测,筛选出1株优良的酵母菌种,以满足校办啤酒生产车间的发酵生产需求。Using Pichia mud as experimental material, and separate by the method of plate separation culture,through the selection of the culture media, the appearance of yeast colonies, cell morphology, cell size, cell death, cell proliferation, and the ability of the fermentation were detected. A Saccharanyces cerevisiae was selected to satisfy the demands of school-run fermentation of beer production workshop production.
