摘  要:目的了解潍坊市售植物油和油炸面食中苯并芘的含量情况。方法抽取潍坊市10个客流量较大的超市、农贸市场、个体店和路边摊位作为采样点,共采集植物油53份,油炸面食40份。将样品中的苯并芘用中性氧化铝固相萃取小柱萃取和净化后用反相色谱柱分离,荧光检测器进行检测。结果检测的53份植物油中苯并芘的检出率为75.5%(40/53),40份油炸面食中苯并芘的检出率为70.0%(28/40),植物油中有苯并芘含量超标现象,植物油和油炸面食的合格率分别为94.3%和100.0%。结论植物油和油炸面食中苯并芘定性检出率较高,需要引起有关部门注意。Objective To learn the content of benzopyrene in Weifang commercial vegetable oil and fried pasta.Methods In weifang City,53 copies of vegetable oil were selected in 10 supermarkets,farmers' markets,provate shops and roadside stalls as sampling points.The samples were precipitated then detected by the reverse-phrase high performance liquid chromatography instrument with fluorescence detector.Results The detected rate of 53 plant oil samples was 75.5%(40/53),and the detected rate of 40 fried flour product samples was 70.0%(28/40).The content of benzopyrene in plant oil partly was more than national standard,the qualified rate of plant oil and fried flour produce was 94.3%and 100.0%respectively.Conclusion The detected rate of benzopyrene was higher in plant oil and fried flour product,the concerned department should pay attention to it.
