摘  要:采用Turbiscan Lab分散稳定分析仪研究不同胶体对灭菌型褐色饮料稳定性的影响,利用Turbiscan Easy Soft软件对稳定性扫描图进行分析,并结合离心沉淀率和长期稳定性观察对比,结果表明,添加结冷胶的灭菌型褐色饮料稳定性系数最小,稳定性最好;采用TLAB型分散稳定性分析仪可以更快速准确地判断该体系的稳定性。Effects of different colloids on the stability of sterilized brown beverage was studied by Turbiscan Lab(TLAB)dispersion stability analyzer.The scan picture of stability was analyzed by Turbiscan Easy Soft,the centrifugal sedimentation rate and long-time stability were also studied.The results showed that the sterilized brown beverage with gellanhad the minimum stability coefficient,which showed the best stability. The system stability was judged more quickly and accurately by using TLAB dispersion stability analyzer.
