摘 要:以内地引进的10个品种嫁接一年生红枣为材料,运用原子吸收和原子荧光分光光度法,测定了红枣中6种有益微量元素Mn、Fe、Cu、Zn、Ca和Se以及4种有害微量元素Cd、Pb、As和Hg的含量,并对其元素含量进行差异性分析,以期为新疆优质枣品种的选育和产品深加工提供科学依据。结果表明,红枣中有益微量元素:钙240.042 7-759.344 3μg/g;铁14.709 4-42.353 0μg/g;锰2.479 1-5.588 5μg/g;锌2.872 4-7.915 1μg/g;铜1.181 8-3.699 9μg/g;硒0.000 6-0.005 9μg/g。有害微量元素:砷0.001 7-0.029 1μg/g;汞0.000 8-0.021 5μg/g;铅0.000 0-0.020 0μg/g;镉0.000 0-0.001 4μg/g。红枣中有益微量元素含量丰富,尤其是Ca和Fe含量较高。有害微量元素含量极低符合国家食品安全标准。对数据进行差异性分析表明,各个微量元素含量在品种间存在极显著性差异。In order to investigate the nutrient and harmful elements of 10 introduced and grafted annual growth cultivars of Chinese jujubes in Alar region, atomic absorption spectrophotometry and atomic fluorescence spectrophotometry were used for determination the content of 6 kinds of beneficial trace elements of Mn, Fe, Cu, Zn, Ca and Se, and 4 kinds of harmful trace elements of Cd, Pb, As and Hg. The experimental results showed that the content of beneficial trace element in jujube was as follows: Ca content was 240.042 7-759.344 3 μg/g; Fe content was 14.709 4-42.353 0 μg/g; Mn content was 2.479 1- 5.588 5 μg/g; Zn content was 2.872 4-7.915 1 μg/g; Cu content was 1.181 8-3.699 9 μg/g; The lowest content of Se was 0.000 6- 0.005 9 μg/g. The content of harmful trace element in jujube was as follows: As content was 0.001 7-0.029 1 μg/g; Hg content was 0.000 8-0.021 5 μg/g; Pb content was 0.000 0-0.020 0 μg/g; Cd content was 0.000 0-0.001 4 μg/g. The beneficial trace elements were plentiful in jujube, specially Ca and Fe. Harmful trace elements content was extremely low in line with national safety standards. Through analysis of variance, there was extremely significant difference on trace elements content and test varieties contents of Zizyphus jujube.
