摘  要:为提高双孢蘑菇废弃菇柄的综合利用率,探讨了其微波真空干燥过程中水分含量的变化,分析真空度、脱水温度、装载量、微波功率对干燥特性和水分有效扩散系数的影响,建立水分比与干燥时间的动力学模型,并对模型进行拟合检验。结果表明,废弃的双孢蘑菇菇柄微波真空干燥速率随装载量的减少和微波功率的增加而升高,其微波真空干燥过程主要为降速期,干燥过程符合Page方程。该模型预测值与试验值拟合良好,可用于描述废弃菇柄的微波真空干燥过程。废弃菇柄水分有效扩散系数随脱水温度的升高,装载量的降低,微波功率的升高而升高。本研究结果可为废弃双孢蘑菇菇柄微波真空干燥过程的水分变化提供参考。The nutritional value of Agaricus bisporus stipe is almost the same as the cap, and the stipe is at least1/10-1/8 of the whole mushroom production, and usually cut off and discard. It not only wasted the resources, but also polluted the environment. The waste stipe should be utilized comprehensively, but it is prone to deterioration, whereas dehydration is the general method to storage the material. In order to study the rules of moisture change in waste stipe of Agaricus bisporus during microwave-vacuum drying to storage the stipe for later comprehensive utilization. The effects of vacuum degree, temperature, loadage and microwave power on drying properties and effective moisture diffusivity were investigated, established the kinetics model of moisture ratio(MR) and drying time based on experimental data, and examined the model. Results showed that waste stipe of Agaricus bisporus microwave-vacuum drying rate was promoted with the decrease of loadage and the increase of microwave power. The microwave-vacuum drying procedure of waste stipe slices of Agaricus bisporus was mostly in decelerate drying rate, and the drying kinetics model of waste stipe was agreed with Page equation(P0.0001), the predicted values of the model were nearly consistent with the experimental values.The moisture effective diffusivity of waste stipe was increased with the decrease of loadage and the increase of temperature and microwave power. The results could be used to describe the microwave-vacuum drying of waste stipe and used in production to predict the moisture content on a certain microwave-vacuum drying condition.
