摘  要:对野生蒙古扁桃、长柄扁桃和野扁桃的粗脂肪含量、油的理化性质和脂肪酸组成进行了分析。结果表明:3种野生扁桃仁粗脂肪含量非常高,在42.98%-53.06%之间;3种扁桃油的酸值(KOH)、过氧化值和氧化稳定性分别为0.42、0.48、0.83 mg/g,0.34、0.44、0.51 mmol/kg和16.37、15.76、20.96 h;3种扁桃油的饱和脂肪酸含量极少,不饱和脂肪酸含量高达95%以上。3种野生扁桃适合开发高档食用油和生物柴油。The contents of crude fat in three kinds of wild almonds A. mongolica,A. pedunculata and A.ledebouriana,and physicochemical properties and fatty acid compositions of their oils were analyzed. The results showed that the contents of crude fat in three kinds of wild almonds were very high,in the range of42. 98%-53. 06%; the acid values,peroxide values and oxidative stabilities of three kinds of almond oils were 0. 42,0. 48,0. 83 mg KOH / g,0. 34,0. 44,0. 51 mmol / kg and 16. 37,15. 76,20. 96 h,respectively; the contents of saturated fatty acids in the three kinds of almond oils were very low,while the contents of unsaturated fatty acids reached above 95%. Three kinds of wild almonds were suitable for being developed as high-grade edible oil and biodiesel.
