摘　　要：介绍芽苗菜的生产现状,指出我国芽苗菜在发展过程中存在食品安全风险较高、能耗大、货架期短等问题,提出了相应的发展对策,包括改善生产环境,规范市场管理,研发新型栽培技术和品种等,并展望了芽苗菜的应用前景。The production status of sprouts is introduced in this article, the problems existed in the process of developing the sprouts are pointed out in china, including high food safety risk, large energy consumption,short shelf life and so on. Corresponding development strategies are put forward, including improving the production environment, standardizing the market management, developing new cultivation technology and varieties and so on. The application prospect of sprouts is looked forward.
