摘  要:果蔬中含有大量水分、碳水化合物及其他营养成分,还含有很多活性物质,因此不耐贮藏,容易腐败,且加工时部分营养物质及活性物质容易损失。随着人们对果蔬加工品品质要求的提高,传统加工技术已不能满足对果蔬加工的要求。能最大限度保持果蔬品质和营养成分的高新技术的探索与应用已成为果蔬加工业发展的大趋势。文中阐述了超微粉碎技术、超声波技术、微波加工技术、膜分离技术、超临界萃取技术5种高新技术的作用原理及其在果蔬加工中的应用现状,分析了高新技术在果蔬加工中的发展前景。Fruits and vegetables contain a lot of moisture,carbohydrates and other nutrients with many active ingredients as well. This characteristic renders them hard to be stored and easy to corrupt. Nutrients and active ingredients in fruits and vegetables are prone to loss when they are processed. With the increased quality requirements for processed fruits and vegetables,traditional processing technologies are not satisfied. The exploration and application of high and new technologies in fruits and vegetables processing industry have become an efficient solution to resolve quality related problems. This mini-review paper expounds the principle of the superfine grinding technology,ultrasonic technology,microwave processing technology,membrane separation technology,and supercritical fluid extraction technology and introduces the status quo of their application in fruits and vegetables processing. Meanwhile,their developmental prospect for fruits and vegetables processing are envisioned so that references can be provided for new product exploration and new technology application in fruits and vegetables processing.
