摘　　要：荞麦主产于我国北方地区,由于荞麦中含有丰富的黄酮类物质,具有降低高血压等心血管疾病发生的功效,荞麦对血管疾病的预防作用被加工成为多种保健食品和茶饮品等。在荞麦食品的加工过程中,提高食品风味的同时要尽可能保持荞麦食品中的各种营养成分。对我国荞麦食品加工的现状进行综述,并对未来发展方向进行展望。Buckwheat is mainly produced in northern part in China. Containing abundant flavonoid compounds, buckwheat possesses the function of preventing cardiovascular and cerebrovascular diseases including antihypertensive. Buckwheat is processed as various kinds of foods and drinks because of its biological activity. The current status of buckwheat foods processing is reviewed, the future of buckwheat processing is also out looked.
