摘 要:目的了解渝北区近4年早餐食品微生物污染状况,为食用安全及监督执法、制定合理有效的监管措施提供科学依据。方法随机抽取重庆市渝北区不同生产、销售渠道的早餐食品,进行微生物项目检测。结果 2012年-2015年共检测696件早餐食品,合格468件,总合格率为67.24%,不同年份合格率比较,差异有统计学意义(χ2=10.11,P<0.05)。不同场所的样品合格率差异有统计学意义(χ2=10.88,P<0.05)。在所检样品中,监督抽检、委托送检的合格率差异有统计学意义(χ2=14.76,P<0.05)。所测样品中菌落总数、大肠菌群的合格率较低,分别为84.48%、81.61%;霉菌及酵母计数合格率为99.43%;沙门菌、志贺菌、金黄色葡萄球菌合格率均为100.00%。结论早餐食品安全存在一定隐患,应加大早餐食品的监督力度,彻底杜绝由早餐食品引起的食源性疾患发生。Objective To learn the microbial contamination status of breakfast food in Yubei district in recent four years,so as to provide scientific basis for the food safety,surveillance and law enforce,as well as the formulation of regulatory measures.Methods Breakfast food from different channels of production and sale in Yubei district,Chongqing were selected for the detection of microbial index. Results A total of 696 breakfast food samples during 2012- 2015 were detected,among which 468 samples were qualified,with the total qualified rate of 67. 24%. The differences on qualified rates among different years were significantly significant( χ2= 10. 11,P〈0. 05). The differences of that of breakfast food in different dining sites were significantly significant( χ2= 10. 88,P〈0. 05). As for the detected samples,the difference on the qualified rates between spot-checking and entrusted inspection was significantly significant( χ2= 14. 76,P〈0. 05). The qualified rate of total bacterial count was 84. 48%; Escherichia coli qualified rate was 81. 61%; the qualified rate of mold and yeast count was 99. 43%; and that of Salmonella Salmonella,Shigella and Staphylococcus aureus was 100. 00%. Conclusion There is a certain risk on breakfast food,so we should increase the supervision of breakfast food,and to eliminate the occurrence of food borne diseases caused by the breakfast food.
