摘  要:利用质构分析仪,比较分析分别以五节芒(Miscanthus floridulus)和棉籽壳为主料栽培获得的糙皮侧耳(Pleurotus ostreatus)子实体的质构指标,同时测算二者干制率和杀青率差异。结果表明,相对于常规棉籽壳培养料栽培,菌草配方栽培糙皮侧耳的菌盖咀嚼性、硬度和回复性较差,菌柄回复性、硬度、内聚性和咀嚼性较差,而且子实体的干制率和杀青率也较低。Texture profile parameters(hardness,adhesiveness,springiness,cohesiveness,chewiness,resilience)of pilei and stipes of Pleurotus ostreatus fruit bodies cultivated on a test compost(consisting of76% Miscanthus floridulus,15% wheat bran,5% corn meal,2% lime and 2% gypsum)and a control compost(consisting of 77% cotton hulls,20% sawdust,2% gypsum and 1% lime)were compared using a TA-XT Plus Texture Analyzer.Pilei of fruit bodies cultivated on the test compost exhibited lower hardness,chewiness and resilience values compared to those grown on the control formula,while the corresponding stipes exhibited lower hardness,cohesiveness,chewiness and resilience values.Lower drying rates(dry weight of fruit bodies/fresh weight of fruit bodies×100)and fixation rates(weight of drained fruit bodies after boiling in water for 5 min/fresh weight of fruit bodies×100)were also recorded with fruit bodies cultivated on the test compost.
