摘  要:以叶蛋白提取率为指标,在单因素试验的基础上采用不同工艺段多参数联合正交试验,探求碱溶酸沉法提取白三叶(Trifolium repens)叶蛋白在打浆、碱溶、酸沉环节的五个工艺项的较好工艺参数。结果预测出,水料比29︰1、打浆时间0.88min、碱溶pH10.15、酸沉pH3.78、酸沉时间29.12min为较好工艺参数。后续的实测表明,在该系列参数下粗蛋白含量为2.57%的盛花期白三叶鲜草的叶蛋白的提取率达到1.237%,换算成粗蛋白基础的蛋白质提取率为48.12%,效果较好。Based on the single factor experiments and the leaf protein concentrations( LPC) extraction ratio,the orthogonal experiment with five technical indicators selected from the three technology section,namely,pulping,alkali extraction and?acid precipitation was tested to explore better technical parameters of white clover LPC extraction.The results predict that the ratio of water and material at 29:1,beating time at 0.88 min,alkali extraction p H at 10.15,acid precipitation p H at 3.78,and acid precipitation time at29.12 min,were the best processing parameter.Subsequent measurement based on above-mentioned conditions shows that the extraction ratio of white clover LPC based on the fresh grass was 1.237%,namely,the extraction ratio of protein based on Crud Protein was 48.12%.The effect was satisfactory.
