摘 要:根据吸光度具有可加性原理,采用紫外-可见吸收光谱对葡萄酒中胭脂红合成色素进行测定。研究胭脂红溶液的紫外-可见吸收光谱表明,该色素分别在216nm、333nm、507nm具有三个明显的吸收峰,并且吸光度与浓度之间具有良好的线性关系,相关系数达到0.999;同时对测定胭脂红含量有影响的苋菜红色素的吸收光谱做了分析,该色素的最大吸收波长为521nm。依据吸光度可加性原理对市售某品牌的红葡萄酒进行检测分析表明:该品牌葡萄酒样品中胭脂红色素含量为70.2ug/m L。该方法操作简便、准确度较高,可用于饮料、色酒等食品中合成色素的检测。Abstract: Based on the theory of Absorbance additivity and UV-visible absorption spectrum of wine, synthesis pigment Ponceau 4R of wine was measured. UV-visible absorption spectrum of Ponceau 4R was analyzed, it was found that there were three obvious absorption peak, 216nm, 333nm, 507nm, respectly, and it was a good linear relationship between absorbance and concentration with the correlation coefficient was 0.999. The maximum absorption wavelength of amaranth was 521 nm by UV-visible absorption spectrum, which was influential to measurement. A brand of red wine was tested, it showed the content ofPonceau 4R was 68.2ug/mL in the wine. This method is with good accuracy and precision, can be used to test synthesis pigment in foods.
