摘 要:研究比较了广西甜茶水提取物中不同分离部位的抗氧化活性。以甜茶叶为原料,经提取、溶剂萃取、柱分离、重结晶等手段,得到了3种不同分离部位提取物,包括粗品、甜茶总黄酮、甜茶素。采用清除二苯代苦味酰基(DPPH)法、磷钼酸盐法等2种体外试验分别测定了3种提取物的抗氧化活性,并同时测定了各提取物中黄酮和甜茶素的含量。结果表明,3种提取物及人工合成BHT的清除DPPH自由基能力和总抗氧化活性大小为:甜茶总黄酮>BHT>粗品>甜茶素,甜茶素没有自由基清除能力和总抗氧化活性。抗氧化活性与黄酮含量相关,黄酮含量越高,抗氧化活性越强。甜茶黄酮具有优良的自由基清除能力和很强的总抗氧化活性,均明显高于人工合成的BHT,是一种值得进一步开发利用的天然抗氧化剂。研究结果与黄酮具有酚羟基和甜茶素没有酚羟基的结构特性相一致。The antioxidant activity of different separated parts in water extracts from Rubus savissimus S.Lee was studied and compared. The three extracts including coarse sample,total flavonoids and rubusoside were extracted from the leaves of Rubus savissimus S.Lee by solvent extraction,re-crystallization and column separation. The antioxidant activity of three extracts was determined in terms of two tests in vitro:scavenging acticity of DPPH radical and phosphomolybdate method. In addition,the content of flavone and rubusoside in the extracts were determined. The capability of DPPH radical scavenging and total antioxidant activity was following:total flavonoids BHT coarse sample rubusoside,rubusoside had no activity. The antioxidant activity correlated with flavone content :the higher the content,the stronger the antioxidant activity. The flavone from Rubus suavissimus S.Lee had strong radical scavenging ability and total antioxidant activity,and its antioxidant activity was obviously higher than that of BHT,which indicated that it would be a good natural antioxidant for food additives. The results were consistent with the structure characteristics of flavone containing phenolic hydroxyl group and rubusoside without phenolic hydroxyl group.
