摘 要:"食品加工机械与设备"是食品科学与工程专业的核心课程,是该专业实现工程型创新人才培养的重要阵地。以食品加工设备的结构和工作原理、主要构件及应用为主线,结合江苏大学"食品加工机械与设备"2008国家级精品课程和2012国家级精品资源共享课建设情况,进行课程内容体系建设与改革,优化教学内容,改进教学方法,培养创新思维,以工程素质能力为核心构建教学体系,以期培养专业基础扎实、工程素质能力强的应用复合型人才,满足我国食品产业在工业化、自动化、智能化水平不断提高的新形势下日益发展的人才需求。The course of Food Processing Machinery and Equipment is a core curriculum for the major of food science and engineering. Jiangsu University has made outstanding achievements in professional courses construction,and Food Processing Machinery and Equipment is honored as the National Quality Courses in 2008 and National Resource Sharing Course in 2012,respectively. In the course,structure and working principle of food processing equipment,main components and function,and typical application construct the basic teaching contents. Combined with Jiangsu University's quality course construction and teaching practices of Food Processing Machinery and Equipment,the curriculum content system construction and reform has been performed. In order to improve the teaching effect,many exploratory measures were taken by optimizing the teaching content, improving teaching methods, cultivating innovative thinking ability. It aims to cultivate application and interdisciplinary talents who possess solid professional foundation,engineering quality and ability. It is necessary enhance and strengthen practical teaching in the course of teaching reform, which can satisfy the need for the development of industrialization,automation,intelligent under the new situation.
