摘  要:本文对冷藏室风机控制运行方案进行了改进,提高了风冷冰箱冷藏室平均相对湿度。为了探讨相对湿度对生菜、青菜保鲜效果的影响,考察了不同相对湿度的风冷冰箱中蔬菜的感官品质、叶绿素、还原糖及纤维素含量随着贮藏期的变化规律。试验结果表明,在高湿度的贮藏条件下,生菜、青菜的叶绿素含量和还原糖损失较少,纤维素含量增加少,外观品质较好。In this paper, the control scheme for fan was optimized and the relative humidity of fresh-food compart- ment in frost-free refrigerator was increased. To research the effect of relative humidity in the fresh-food compartment after being improved on fresh-keeping of vegetable, sensory quality, the chlorophyll content, the reducing sugar and the cellulose content under different humidity conditions during storage were studied. The results showed that, under high humidity storage conditions, the loss of the chlorophyll content, the reducing sugar decreased with the increase of humidity, and vegetables had a lower the cellulose content change and an improved quality appearance.
