摘  要:以脱脂蚕蛹粉为原料研究碱液提取蚕蛹蛋白的工艺。通过单因素实验探讨温度、时间、p H、液固比4个参数对蚕蛹蛋白得率的影响,然后通过正交实验确定了蚕蛹蛋白的较佳提取条件。结果表明,影响提取率的主次关系依次为:温度、液固比、p H、时间。蚕蛹蛋白提取的较优条件为:温度70℃、时间3.0 h、p H 8.0、液固比14∶1(m L/g),在上述条件下蚕蛹蛋白得率为72.42%,蛋白质含量86.2%,含水率为11.4%,所得蛋白为淡褐色,几乎无蛹臭味。The extraction of silkworm pupa protein with alkali from defatted silkworm pupa powder was studied. Single factor and orthogonal experiments were used to study the effects of the parameters such as temperature , time,pH and ration of liquid to solid on the yield of silkworm pupa protein. The results showed that the extraction temperature was the more important factor that affected the effect of extraction,following the ration of liquid to solid and pH and extraction time, the optimal conditions were obtained with orthogonal experiments, as fol lows: extraction temperature was 70 ℃, extraction time was 3.0 h,pH 8.0 and ration of liquid to solid was 14 ∶ 1(mL/g), under these conditions the yield of silkworm pupa protein was 72.42%, the protein content of 86.2%, water content was 11.4%, the protein was light brown, almost no pupal odor.
