摘 要:以椰子种皮为原料,测定了其基本成分和多糖提取液的抗氧化活性。结果表明,干燥后椰子种皮中粗纤维和可溶性糖的含量分别为17.69%和9.02%,经脱脂和超声波辅助提取所得提取液中多糖含量为1280.37μg/mL;该提取液对的抗氧化能力与其浓度呈剂量效应,原液对DPPH·自由基和羟自由基的清除率分别为67.15%和77.35%;对Fe^(3+)的还原能力(0.99)也高于100μg/mL的Vc(0.79),是一种潜在的抗氧化资源。The basic composition of coconut testa and antioxidant activities of its polysaccharides extracts were analyzed in paper. Results showed that crude fiber and soluble total sugar of dry coconut testa were 17.69% and 9.02%, respectively. And the soluble total sugar content of its polysaccharides extracts obtained by ultrasonic assistance from the degrease coconut was 1280.37 μg/mL. And the antioxidant activities of this extract present a dose effect with the sample concentration. DPPH· radical and hydroxyl radical scavenging activity of the primary polysaccharides extracts were 67.15% and 77.35%, respectively, and its reducing power(0.99) on Fe^(3+) was higher than that of Vc(0.79) at 100 μg/mL. These all indicated that the polysaccharides extracts of coconut testa was a kind of potential antioxidant resource.
