摘　　要：在食品理化检验技术课程教学中,实施师生角色转换教学法,加深学生对知识和技能的理解和掌握。论述实施角色转换法的目的、可性性及具体方法,总结其取得的教学效果及存在的主要问题,为提高食品理化检验技术课程教学质量提供借鉴。In the teaching of food physical and chemical determination technology curriculum, role transformation method was used to deepen students understand and grasp of the knowledge and skills. This paper discussed the purpose, feasibility and concrete method, summarized the teaching effect acquired and the main existing problems, providing reference for improving the teaching quality of food physical and chemical determination technology curriculum.
