摘　　要：在酿酒特殊时期,通过对现有酿造工艺进行探索改进,并对比改进前后酒基产量与质量的变化,结论是:秋季转排工艺优化成果显著,有效解决了秋季转排问题,产量与质量得到提升。During the wine making special period, we improved the existing brewing technology and compared before and after the change of the liquor base＇s yield and quality. We can draw a conclusion that the process optimization of autumn trans-production showed a remarkable performance. It effectively solved the problem of autumn trans-production and improved the yield and quality of the liquor base.
