摘 要:为了优化生鲜乳中脂肪酸的组成与比例,提高牛奶品质,试验采用气相色谱技术,测定了南方荷斯坦奶牛一个完整泌乳期原料乳中的脂肪酸组成和含量。结果表明:检出C4-C24共计34种脂肪酸,按饱和度和碳链长度划分,饱和脂肪酸(SFA)、单不饱和脂肪酸(MUFA)、多不饱和脂肪酸(PU-FA)的比值约为68:27:5,短链脂肪酸(SC—FA)、中链脂肪酸(mc—FA)、长链脂肪酸(1c-FA)的比值约为3:21:76。除C15:0、C18:2t、C20:0和PUFA外,测定月份对样品乳中其他脂肪酸含量均有显著影响(P〈0.05);泌乳月对总SFA含量及总MUFA含量均有显著影响(P〈0.05),但对总Pu-FA含量的影响不显著(P〉0.05);泌乳月对mc-FA和1c—FA含量均有极显著影响(P〈0.01),而对sc-FA含量的影响不显著(P〉0.05)。To optimize the composition and proportion of fatty acids in fresh milk and improve the milk quality, the contents of fatty acids in raw milk from the southern Holstein cattle during a complete lactation period were determined using gas chromatography (GC) technique. The re- sults showed that a total of 34 kinds of fatty acids including C4 to C24 was detected in raw milk. The ratio among saturated fatty acid( SFA), monounsaturated fatty acid(MUFA) ,and polyunsaturated fatty acid(PUFA) was about 68:27:5 by saturation. The ratio among short chain fatty acid (se -FA), medium chain fatty acid (me- FA ), and long chain fatty acid (lc -FA ) was about 3:21:76 by the length of carbon chain: In addition to C15:0, C18:2t, C20:0 and PUFA, the month of determination had a significant effect (P 〈 0.05 ) on the contents of other fatty acids in milk samples; the lactation month had a significant effect (P 〈 0.05 ) on the contents Of total SFA and total MUFA, but the impact on the content of total PUFA was not significant( P 〉 0.05 ) ; the lactation month had an extremely significant effect ( P 〈 0.01 ) on the contents of me - FA and1c - FA, while the impact on the sc - FA content was not significant ( P 〉 0.05 ).
