摘  要:研究测定了莱芜猪与长白猪杂交后代的胴体性能、肉质性状及背最长肌氨基酸、脂肪酸含量。结果表明,试验猪屠宰体重98.42 kg,胴体瘦肉率为52.69%,肉色评分3.83分、大理石纹评分3.50分,p H16.45,肌内脂肪2.68%。每100 g背最长肌氨基酸总量、鲜味氨基酸含量和必需氨基酸含量分别为18.48、14.49、7.38 g,必需氨基酸占氨基酸总量比例、鲜味氨基酸占氨基酸总量比例分别为39.93%、78.41%;含棕榈酸、硬脂酸、油酸、亚油酸分别为27.22%、13.43%、49.55%、7.51%。The carcass performance, meat qualities and the contents of amino acid and fatty acid of 100 g longissimus dorsi of progenies of laiwu pigs and landrace pigs were studied. The results showed that, the slaughter weight of testing pig was 98.42 kg, Lean percentage of black Gai pigs was 52.69%, meat color scoreand and marbling score were 3.83 and 3.50. The value of p H1 was 6.45, IMF was 2.68%. The contents of TAA, DAA and EAA of 100 g longissimus dorsi were 18.48 g, 14.49 g, 7.38 g. EAA/TAA and DAA/TAA were 39.93% and 78.41%.The contents of palmitic acid, stearic acid, oleic acid, linoleic acid were 27.22%, 13.43%, 49.55%, 7.51%.
