摘  要:拓展蚕桑资源在食品、医药、饲料和材料等领域的应用价值,已经成为现代蚕桑产业转型升级的重要发展方向之一,而蚕桑资源的多元化开发利用有赖于现代加工技术的支撑。国内研究者将低温加工技术、微胶囊技术、微生物转化技术等应用于蚕桑资源的多元化开发利用中,例如蚕桑资源中的蛋白质、油脂等营养成分与花青素、多酚、生物碱、多糖等功能活性成分的分离提纯,桑椹、桑叶和蚕蛹食品的加工、保鲜等,并建立了部分蚕桑资源产品的加工技术体系。本文总结近10年蚕桑资源多元化利用加工新技术研究与产品开发方面取得的重要进展和成果,并探讨蚕桑资源多元化开发利用亟待解决与突破的关键技术。To expand the application value of silkworm and mulberry resources in food,pharmaceutical,forage and material industries has become an important development direction for transformation and upgrading of modern sericultural industry. And,diversified development and utilization of silkworm and mulberry resources is dependent on the support from modern processing technology. In the past decades,Chinese researchers have employed low temperature processing technology, microcapsule technology, microbiological transformation technology and so on in diversified development and utilization of silkworm and mulberry resources. For example,separation and purification of nutrients( e. g. protein and fat) and functional ingredients( e. g. anthocyanin,polyphenols,alkaloid and polysaccharide) from silkworm and mulberry resources. Besides,these technologies have been used in food processing and fresh-keeping with mulberry fruit,mulberry leaf and silkworm pupa as materials. As a result,a number of processing technological systems have been established for manufacturing products using silkworm and mulberry resources. This paper reviews the important progresses and achievements in new technology and product development for diversified utilization of silkworm and mulberry resources,and explored the key technologies to be addressed and solved in the near future for diversified utilization of silkworm and mulberry resources.
