呼伦贝尔羊短尾品系不同部位肉营养成分的测定和评价

摘　　要：呼伦贝尔羊短尾品系是以鄂温克草原为核心繁殖地的蒙古羊优良品系,肉气滋味鲜美、富有韧性和嚼感,在我国东北倍受青睐,受到了鄂温克旗政府的重视和保护性繁育,但该品系羊肉一直缺乏系统的营养成分数据和评价。从鄂温克旗采集短尾品系羊肉45份,其中后座21份、肋/腩20份和羊肥尾4份,对水分、脂肪、蛋白质、灰分、氨基酸、脂肪酸和胆固醇等营养素进行了测定。结果显示,呼伦贝尔羊短尾品系羊肉EAA接近人体标准模式,且5种鲜味氨基酸高达44.95%;肥尾和皮下脂肪SFA:MUFA为1∶1,且胆固醇含量低(x珋±2SD,38.24±14.05mg/100g)。呼伦贝尔市羊短尾品系应得到大力繁育和开发,并对其各种性能开展全面的研究和评价。Hulunbuir small-fatty-tailed sheep is an excellent breed of Mongolian sheep,Ewenki grassland is core breeding area,which is very famous in northeast China for its mutton rich in good flavor,delicious and chewy. The local government has already paid attention to protective breeding and exploitation,however,the mutton has been lacking nutrients data and nutritional evaluation. A total of 45 meat samples of Hulunbuir short-fatty-tailed sheep were collected from Ewenki banner,including 21 silverside cut,20 rib cut and 4 fatty-tail specimens,and water,fat,protein,ash,amino-acid,fatty acid and cholesterol were determined and analyzed. Results showed EAA of the mutton was very close to Human Standard Pattern（ adult）,and sum of five flavor amino acids was 44. 95%. SFA： MUFA of fatty-tail and subcutaneous fat was 1：1,implies higher nutritional value,additionally,cholesterol of these fatty parts was averaging 38.24 ± 14.05 mg/100g（±2SD）,which was obviously lower. The peculiar local breed should be protected and further study and assessment on its properties was needed.
